Scobi Is In The House
Over the last couple of weeks we grew a scobi, the collection of organisms that’ll turn sugar, tea and fruits into the delicious beverage we call kombucha.

We’re following Dave’s recipe. Same Dave who makes succulent dishes from all kinds of uber powerful peppers.
As of now, the tea is steeping and sugar dissolving. Very exciting times. In about an hour the solution will be strained and added to the ball jars where it’ll cool. Later on we’ll divide up the scobi into each jar, wait a week and then get to bottling.
